 Kolkata biryani is a flavorful and aromatic rice dish that originated in the city of Kolkata, India. This dish is a fusion of Mughlai and Bengali cuisines and is known for its unique blend of spices and fragrant basmati rice. Here's a step-by-step recipe for making Kolkata biryani at home:

Ingredients:

  • 1 kg chicken, cut into pieces
  • 2 cups basmati rice
  • 2 onions, finely chopped
  • 1 tomato, chopped
  • 1 cup yogurt
  • 1 tablespoon ginger paste
  • 1 tablespoon garlic paste
  • 1 tablespoon biryani masala
  • 1 teaspoon turmeric powder
  • 1 teaspoon red chili powder
  • 1 teaspoon cumin powder
  • 1 teaspoon coriander powder
  • 4-5 green cardamom pods
  • 4-5 cloves
  • 1 cinnamon stick
  • 2 bay leaves
  • 1 teaspoon rose water
  • 1/2 cup ghee
  • Salt to taste
  • Fried onions and mint leaves for garnishing

Instructions:

  1. Clean the rice and soak it in water for 30 minutes.
  2. Heat ghee in a large pot or dutch oven over medium heat.
  3. Add the onions and fry until golden brown.
  4. Add the chicken pieces and fry until they turn golden brown.
  5. Add ginger paste, garlic paste, and chopped tomato. Stir well and cook for a few minutes.
  6. Add yogurt and all the spices - turmeric, chili powder, cumin powder, coriander powder, biryani masala, green cardamom pods, cloves, cinnamon stick, bay leaves, and salt. Mix well.
  7. Cover the pot with a lid and cook for 15-20 minutes until the chicken is cooked through and the spices are well incorporated.
  8. Remove the chicken pieces from the pot and keep aside.
  9. Drain the soaked rice and add it to the pot. Stir well to mix with the spices and cook for 2-3 minutes.
  10. Add enough water to cover the rice and bring it to a boil.
  11. Reduce the heat to low, cover the pot with a lid, and cook the rice for 10-12 minutes until it is almost done.
  12. Add the cooked chicken pieces on top of the rice.
  13. Drizzle rose water over the chicken and cover the pot with a lid again.
  14. Cook for another 5-7 minutes until the rice is fully cooked.
  15. Remove the pot from the heat and let it sit for 5-10 minutes.
  16. Garnish with fried onions and mint leaves.
  17. Serve hot with raita or salad.
