Kolkata biryani is a flavorful and aromatic rice dish that originated in the city of Kolkata, India. This dish is a fusion of Mughlai and Bengali cuisines and is known for its unique blend of spices and fragrant basmati rice. Here's a step-by-step recipe for making Kolkata biryani at home:
Ingredients:
- 1 kg chicken, cut into pieces
- 2 cups basmati rice
- 2 onions, finely chopped
- 1 tomato, chopped
- 1 cup yogurt
- 1 tablespoon ginger paste
- 1 tablespoon garlic paste
- 1 tablespoon biryani masala
- 1 teaspoon turmeric powder
- 1 teaspoon red chili powder
- 1 teaspoon cumin powder
- 1 teaspoon coriander powder
- 4-5 green cardamom pods
- 4-5 cloves
- 1 cinnamon stick
- 2 bay leaves
- 1 teaspoon rose water
- 1/2 cup ghee
- Salt to taste
- Fried onions and mint leaves for garnishing
Instructions:
- Clean the rice and soak it in water for 30 minutes.
- Heat ghee in a large pot or dutch oven over medium heat.
- Add the onions and fry until golden brown.
- Add the chicken pieces and fry until they turn golden brown.
- Add ginger paste, garlic paste, and chopped tomato. Stir well and cook for a few minutes.
- Add yogurt and all the spices - turmeric, chili powder, cumin powder, coriander powder, biryani masala, green cardamom pods, cloves, cinnamon stick, bay leaves, and salt. Mix well.
- Cover the pot with a lid and cook for 15-20 minutes until the chicken is cooked through and the spices are well incorporated.
- Remove the chicken pieces from the pot and keep aside.
- Drain the soaked rice and add it to the pot. Stir well to mix with the spices and cook for 2-3 minutes.
- Add enough water to cover the rice and bring it to a boil.
- Reduce the heat to low, cover the pot with a lid, and cook the rice for 10-12 minutes until it is almost done.
- Add the cooked chicken pieces on top of the rice.
- Drizzle rose water over the chicken and cover the pot with a lid again.
- Cook for another 5-7 minutes until the rice is fully cooked.
- Remove the pot from the heat and let it sit for 5-10 minutes.
- Garnish with fried onions and mint leaves.
- Serve hot with raita or salad.
