Ingredients:

  • 1 medium-sized bitter gourd (karela)
  • 1 small-sized raw banana (kachkola)
  • 1 medium-sized potato (aloo)
  • 1 small-sized sweet potato (mishti aloo)
  • 1 medium-sized brinjal (begun)
  • 4-5 drumsticks (shojne data)
  • 1/2 cup of sliced pumpkin (kumro)
  • 1/2 cup of sliced ridge gourd (jhinge)
  • 1 tablespoon of ginger paste (ada bata)
  • 1 tablespoon of mustard paste (shorshe bata)
  • 1 teaspoon of turmeric powder (holud)
  • 1 teaspoon of cumin powder (jeera)
  • 1 teaspoon of coriander powder (dhaniya)
  • 1 teaspoon of red chili powder (lal mirch)
  • Salt to taste
  • 2 tablespoons of mustard oil (sarson tel)
  • 1 teaspoon of sugar (chini)

Instructions:

  1. Begin by washing and peeling all the vegetables. Cut them into small pieces and keep them aside.
  2. In a large pot, heat the mustard oil and add the ginger paste. Fry for a few seconds until fragrant.
  3. Add the sliced bitter gourd and fry for a minute or two until they are slightly browned.
  4. Add the remaining vegetables and stir well. Add the salt, turmeric powder, cumin powder, coriander powder, and red chili powder. Mix well and let it cook for a few minutes.
  5. Add enough water to cover the vegetables and bring the mixture to a boil. Reduce the heat and let it simmer for 10-15 minutes or until the vegetables are cooked through.
  6. In a separate bowl, mix the mustard paste with a little water to make a smooth paste. Add this to the pot and mix well.
  7. Add a teaspoon of sugar and let it cook for a few more minutes until the flavors are well combined.
  8. Turn off the heat and let the sukto cool down for a few minutes. Serve hot with steamed rice.
