Ingredients:

  • 1kg of mutton, cut into bite-sized pieces
  • 2 large onions, finely chopped
  • 2 tablespoons of ginger paste
  • 2 tablespoons of garlic paste
  • 2 green chilies, finely chopped
  • 2 tablespoons of cumin powder
  • 2 tablespoons of coriander powder
  • 1 tablespoon of turmeric powder
  • 1 tablespoon of red chili powder
  • 1 teaspoon of garam masala powder
  • Salt to taste
  • 4 tablespoons of mustard oil
  • 1 bay leaf
  • 2 cardamom pods
  • 2 cloves
  • 1 cinnamon stick
  • Fresh coriander leaves for garnish

Instructions:

  1. Heat the mustard oil in a large pan over medium heat. Add the bay leaf, cardamom pods, cloves, and cinnamon stick and fry for a few seconds until fragrant.
  2. Add the chopped onions and fry until they are soft and translucent. Add the ginger paste, garlic paste, and green chilies and fry for another minute.
  3. Add the cumin powder, coriander powder, turmeric powder, red chili powder, and salt. Mix well and fry for a minute or two until the spices are fragrant.
  4. Add the mutton and stir well. Fry for a few minutes until the mutton is slightly browned.
  5. Add enough water to cover the mutton and bring it to a boil. Reduce the heat and let it simmer for 1-2 hours until the mutton is tender and the gravy has thickened.
  6. Add the garam masala powder and mix well. Let it simmer for another 10-15 minutes.
  7. Garnish with fresh coriander leaves and serve hot with steamed rice.
