Kosha Mangsho is a

Ingredients:
- 1kg of mutton, cut into bite-sized pieces
- 2 large onions, finely chopped
- 2 tablespoons of ginger paste
- 2 tablespoons of garlic paste
- 2 green chilies, finely chopped
- 2 tablespoons of cumin powder
- 2 tablespoons of coriander powder
- 1 tablespoon of turmeric powder
- 1 tablespoon of red chili powder
- 1 teaspoon of garam masala powder
- Salt to taste
- 4 tablespoons of mustard oil
- 1 bay leaf
- 2 cardamom pods
- 2 cloves
- 1 cinnamon stick
- Fresh coriander leaves for garnish
Instructions:
- Heat the mustard oil in a large pan over
medium heat. Add the bay leaf, cardamom pods, cloves, and cinnamon stick
and fry for a few seconds until fragrant.
- Add the chopped onions and fry until they are
soft and translucent. Add the ginger paste, garlic paste, and green
chilies and fry for another minute.
- Add the cumin powder, coriander powder,
turmeric powder, red chili powder, and salt. Mix well and fry for a minute
or two until the spices are fragrant.
- Add the mutton and stir well. Fry for a few
minutes until the mutton is slightly browned.
- Add enough water to cover the mutton and
bring it to a boil. Reduce the heat and let it simmer for 1-2 hours until
the mutton is tender and the gravy has thickened.
- Add the garam masala powder and mix well. Let
it simmer for another 10-15 minutes.
- Garnish with fresh coriander leaves and serve
hot with steamed rice.
